Busy moms are juggling so many things these days - kids, family, career, after-school activities - they don't have the time or the energy to stand in front of the stove for hours. 1. Pasta - all kids love pasta and there are so many variations of pasta dishes you can come up with. Macaroni and cheese, spaghetti and tomato sauce, cold pasta salads. Add a green salad and a loaf of fresh bread and your super easy dinner is on the table in 10 minutes.
2. Hot dogs and french fries - kids will definitely gobble it up and requires almost no work at all. Throw french fries in the oven, hot dogs on the grill and you are done!
3. Home-made pizza - great for using up all the leftovers. Left-over chicken, hamburger or deli meats, as well as any veggies you can find in the refrigerator can be chopped up to put on the pizza. Add salsa, tomato sauce or chopped up tomato and lots of cheese to make extra yummy! Most kids are perfectly happy with just plain cheese pizza.
4. Cheese quesadilla is a toasted tortilla with melted cheese inside. But in addition to cheese, you can put practically anything in a quesadilla - meat, vegetables, olives, mushrooms, tomatoes! Cut into triangles. Easy to eat, quick, no mess at all.
5. Stir-fry and rice - while rice is cooking, fry up some meat and chopped veggies, add a sauce of your choice and simmer for a few minutes. Quick, healthy, balanced meal!
6. Cheese and crackers - great for super lazy Sunday afternoons, or picnics in the park or your backyard. All you need is a selection of snacks your family likes, cheese, deli meats, crackers, pita chips, baby carrots, cherry tomatoes, olives, celery, veggi dips, cream cheese. Kids will enjoy making their own "cracker sandwiches". No cooking required!
7. Peanut Butter and Jelly Sandwiches - there is nothing wrong with sandwiches for dinner. Peanut butter sandwiches are perfectly healthy, especially if served with fruit on the side.
8. Mashed Potatoes and Chicken - for those days when everybody is starving, mashed potatoes in combination with fried, or oven-backed chicken strips will fill people up. Green salad or veggies on the side.
9. Chips, Salsa and Guacamole - maybe chips are not the healthiest food, but avocado is the richest source of fiber among all fruits and vegetables and packed with vitamins and minerals.
10. Tuna Salad Sandwiches - quick, easy and nutritious. To make it more fun use pita pockets, crackers or even hot dog buns. Celery, baby carrots and baby tomatoes on the side. It is so easy, even kids can make it!
